This dish is a standout for me because it’s easy enough for a weeknight dinner but impressive enough to serve to guests. Plus, the leftovers (if there are any!) make a fantastic next-day lunch. It’s a go-to recipe that never fails to satisfy my craving for a flavourful and fuss-free meal.

In this recipe, prawns are quickly cooked with garlic and chilli flakes in olive oil, then deglazed with white vermouth for added depth. A splash of lemon juice brightens up the dish, while rocket adds a peppery freshness. Tossed together with al dente spaghetti, this meal is simple yet packed with flavour.

What I really love about this recipe is how quickly everything comes together. In just about 20 minutes, I can have a beautiful plate of spaghetti coated in this rich, spicy sauce, tossed with fresh rocket for a pop of colour and peppery bite.

Chilli Prawns & Rocket Spaghetti

  • Servings: 4

Ingredients

  • 455g dried spaghetti
  • 400g prawns (butterflied)
  • 2 cloves garlic
  • 2 tbsp extra virgin olive oil
  • 1 tsp chilli flakes
  • 1 tbsp tomato purée
  • 1 glass of white vermouth
  • Juice of 1 lemon
  • Handful of rocket

Directions

  1. Bring pan of salted water to the boil and cook the spaghetti according to the packet instructions.
  2. Peel and mince the garlic. Heat the oil in a frying pan, then add in the garlic along with the chilli flakes.
  3. Add the prawns and cook them for a minute. Add the vermouth and tomato purée, and cook for further 3 minutes before adding the lemon juice.
  4. Roughly chop the rocket. When the pasta is cooked, drain it in a colander, reserving a little of the cooking water.
  5. Mix the spaghetti through the prawns and add the rocket, adding a little of the reserved cooking water if needed and season with salt and pepper.
