These prawn fajitas are all about fresh flavours and quick cooking. The prawns get a lovely coating of oregano, cumin, and lime juice that gives them a proper Mexican kick without being too fiery. You don't need to marinate them for long—just 15 minutes is enough to let those spices work their magic.

The key is getting the pan nice and hot so the prawns cook quickly and the peppers keep their crunch. Once everything's sizzling away, you'll have dinner ready in no time.
