There's something proper about apple crumble that makes it a favourite for Sunday lunch or family gatherings. The crisp, tart Bramley apples break down beautifully in the oven, becoming soft and jammy beneath a golden, buttery crumble topping that's studded with flaked almonds for extra texture.

The secret to perfect crumble is keeping your butter cold and working quickly so the topping stays light and crumbly rather than dense.

This version adds ground almonds and a hint of cinnamon to the apple filling, which gives the fruit base a lovely warmth and depth without overpowering the natural apple flavour. The crumble topping itself uses a mix of flour, butter, and ground almonds, rubbed together until it looks like breadcrumbs. A final sprinkle of light brown sugar and flaked almonds creates a gorgeous caramelised crust as it bakes.

Now, the custard is where this dessert truly shines. Homemade vanilla custard is a different beast entirely from the shop-bought stuff. It's rich, silky, and has a proper depth of flavour from real vanilla extract and egg yolks. The process takes a bit of patience, whisking constantly as the mixture thickens on the hob, but the result is well worth the effort.

The combination of warm, spiced apples with that velvety custard is what makes this dessert feel like a proper indulgence. It's the kind of thing that brings people together around the table, especially on cooler evenings when you want something hearty and comforting. Ingredients

  • Whisk

  • Mixing Bowl

Instructions

    Put the cubed butter into the freezer for about 20 minutes, and preheat your oven to 200C

    Put the peeled, cored and sliced apples into a dish, sprinkle over the two tablespoons of golden caster sugar, and add the vanilla extract.

    Next, sprinkle over the ground almonds and cinnamon, and flatten down with a spoon.

    Make the crumble topping by combining the plain flour, caster sugar, and ground almonds in a bowl. Take the butter out of the fridge and add to the flour. Run it together between your fingertips until the mixture looks like breadcrumbs.

    Cover the apples with the crumble mix, sprinkle over the light brown sugar, followed by the flaked almonds.

    Set the dish on a baking tray (to catch any spills during baking) and put in the preheated oven for 35-40 minutes, until the top is golden and the apples feel very soft.

    To make the custard, heat the milk & cream together in a large pan and gently bring to just below boiling point. Meanwhile in a large bowl, whisk the yolks, cornflour, sugar and vanilla together. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.

    Clean your pan (which will help prevent burning), then pour the custard mixture back into it. On a medium heat, whisk constantly until the custard has thickened.

    When the crumble is cooked remove from the oven & leave to cool for 10 minutes before serving with homemade custard & a scoop of your favourite ice cream.
