Refreshing Lime & Mint Mojito Ice Lollies

Cool mojito-inspired ice lollies with fresh mint, zesty lime, and a splash of white rum for grown-up summer refreshment that is not too sweet.

These mojito lollies take the best bits of the cocktail and turn them into something you can eat. A proper mojito has that crisp mint and lime combination that's really refreshing rather than just sweet, and freezing it actually works quite well because those flavours come through even when cold.

Making them is simple enough. You dissolve sugar in a bit of hot water, steep some mint in it, then mix everything else in. The mint infusion is worth doing properly rather than just throwing the leaves straight in, because otherwise you end up with bits stuck in your teeth and an uneven flavour.

The sparkling water keeps a hint of that fizzy sensation even when frozen, making these feel more like the actual drink.

Using both juice and zest means you get more lime flavour without making them too sour. The rum is there for taste rather than getting anyone tipsy, though it does help with the texture because alcohol doesn't freeze as hard as water.

You need to be patient with the freezing. They take ages to set properly, and if you try to rush it by turning the freezer up, you just end up with rock-hard lollies that hurt your teeth. Four or five hours minimum, really overnight if you can wait.

They're handy to have in the freezer when it's warm. Not too sweet, not too heavy, and the mint makes them feel quite cooling. The alcohol content means they don't freeze completely solid, so you don't need to wait for them to soften before eating like you do with some shop-bought ones.

Ingredients

  • Small Saucepan
  • Sieve
  • Ice Lolly Moulds

Instructions

    In a small saucepan, gently heat 100ml of the sparkling water with the caster sugar, stirring until completely dissolved. Remove from heat and allow to cool slightly.

    Place the mint leaves in a jug. Pour over the warm sugar syrup and leave to infuse for 10 minutes.

    Strain the mint-infused syrup through a sieve, pressing the mint leaves to extract maximum flavour. Discard the mint leaves.

    Stir in the lime zest, lime juice, and white rum until well combined.

    Add the remaining 200ml of sparkling water and mix gently to preserve some of the fizz.

    Pour the mixture into 8 ice lolly moulds.

    Insert lolly sticks and freeze for at least 4-5 hours or overnight until solid.
