Hot Whiskey with Autumn Spices
A warming Irish whiskey cocktail infused with autumn spices, lemon, and rosemary. Simple to make with optional honey for sweetness. Perfect for cold evenings.
A seasonal twist on a classic margarita, with tequila, triple sec, and fresh lime juice shaken with pumpkin spice syrup and served in a spiced salt-rimmed glass.
If you enjoy a classic margarita, this autumn version is worth making at least once. The base is the same - tequila, triple sec, and fresh lime juice - but the addition of pumpkin spice syrup gives it a warm, spiced edge that works surprisingly well with the sharp citrus. It's not as sweet as you might expect, and the spiced salt rim adds a savoury contrast that ties everything together.
The syrup does most of the heavy lifting here. A good pumpkin spice syrup brings cinnamon, ginger, nutmeg, and clove into the glass without muddying the drink, so the lime still comes through cleanly. You can find it in most supermarkets from September onwards, or make your own if you prefer.
Shaking the cocktail until the outside of the shaker feels properly frosty - not just cold - ensures the drink is well-chilled and the syrup is fully incorporated.
This recipe makes one cocktail, so scale it up by the number of glasses you need. The ratio stays the same: 2 parts tequila, 1 part triple sec, 2 parts lime juice, and 0.5 parts pumpkin spice syrup.
Prepping the glass first makes the whole process smoother. Mix the coarse salt and pumpkin spice on a small plate, run the lime wedge around the rim, and dip it in. It takes about ten seconds and it's the detail that makes the drink look and taste properly finished.
In terms of tequila, a blanco or reposado works well here. Blanco keeps the flavours clean and lets the spices stand out, while reposado adds a slight oak note that pairs nicely with the cinnamon. Either is fine - it comes down to what you have to hand.
These work well as a Halloween or autumn gathering drink. You can batch the cocktail mixture ahead of time (without ice) and keep it in the fridge for up to a few hours. When you're ready to serve, give it a good shake with ice for each glass individually so each drink is properly cold and well mixed. The spiced salt rim should be done to order, as it can get soggy if left too long.
Serve in a rocks glass (old fashioned glass) over fresh ice. The cinnamon stick garnish is as much for aroma as decoration - give the drink a gentle stir with it before taking the first sip. A lime wheel on the rim finishes the presentation.
For a non-alcoholic version, replace the tequila with sparkling water or a non-alcoholic tequila alternative, and swap the triple sec for a splash of orange juice. The pumpkin spice syrup and lime juice still carry the flavour well without the alcohol. You can also try this with mezcal instead of tequila for a smokier, more complex version of the drink.
