Miso Prawn & Crab Cups
Ingredients
- 200g cooked jumbo king prawns (2 or 3 per cup)
- 100g crab meat
- Baby gem lettuce
- 4 baby tomatoes quartered
- 2 tbsp of tomato ketchup
- 5 tbsp miso mayonnaise (shop bought)
- Juice of 1/2 a lemon
- Handful garlic & herb croutons (shop bought)
- Fresh dill to serve
- Salad cress to serve
- Chives to serve
- 1 lemon quartered
- Smoked paprika to serve
Directions
- To make the dressing, mix the miso mayo together with the tomato ketchup, then combine with the lemon juice & set aside.
- Separate the lettuce into cups and arrange on a platter.
- Fill the lettuce cups with prawns, crab meat, croutons and tomatoes making sure each cup has as an equal amount of filling.
- Spoon over the miso dressing, then finish with snippets of cress, dill & chives and top it all off with a sprinkle of smoked paprika. Serve with lemon wedges.
