Chilli Prawns & Rocket Spaghetti
Ingredients
- 455g dried spaghetti
- 400g prawns (butterflied)
- 2 cloves garlic
- 2 tbsp extra virgin olive oil
- 1 tsp chilli flakes
- 1 tbsp tomato purée
- 1 glass of white vermouth
- Juice of 1 lemon
- Handful of rocket
Directions
- Bring pan of salted water to the boil and cook the spaghetti according to the packet instructions.
- Peel and mince the garlic. Heat the oil in a frying pan, then add in the garlic along with the chilli flakes.
- Add the prawns and cook them for a minute. Add the vermouth and tomato purée, and cook for further 3 minutes before adding the lemon juice.
- Roughly chop the rocket. When the pasta is cooked, drain it in a colander, reserving a little of the cooking water.
- Mix the spaghetti through the prawns and add the rocket, adding a little of the reserved cooking water if needed and season with salt and pepper.
