Santa’s White Chocolate Cookies
Ingredients
- 150g plain flour
- 125g butter
- 100g golden caster sugar
- 75g light brown sugar
- 75g rolled oats
- 75g mixed dried fruit
- 50g walnuts chopped
- 150g white chocolate chips
- 1 tsp vanilla extract
- ½ tsp baking powder
- ½ tsp salt
- 1 egg
Directions
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- In a bowl mix together the flour, baking powder, salt, and oats. Then fold in the dried fruit, walnuts, and chocolate chips.
- In a separate bowl, whisk together the butter and sugar until creamy, then beat in the egg and vanilla extract. Mix the dry ingredients with the wet ingredients together.
- Roll a tablespoon at a time of the dough into balls in your hands then place on the baking sheet, then squash down with a fork.
- Bake in the oven for 15 minutes, they will still be soft but lightly golden. Leave to cool for 5 minutes then remove to a wire rack to cool fully.
