Spicy Roasted Butter Beans

Ingredients

  • 1 can butter beans
  • 1 tbsp garlic olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • ¼ tsp chilli powder

Directions

  1. Preheat your oven to 180C.
  2. Dain and rinse the beans, then dry them with kitchen towel. Make sure they’re completely dry or they won’t crisp up in the oven.
  3. In a bowl, mix the beans together the olive oil, spices, salt and pepper. Give everything a good mix together and make sure the beans are well coated in the spicy oil.
  4. Line a baking sheet & spread the beans out.
  5. Pop into the oven & roast for 35-40 minutes, by which time the beans will have become lovely and crispy.
  6. Sprinkle with freshly chopped coriander & a little extra salt.
