This indulgent breakfast stack is really easy to assemble. Just scramble up some eggs, fry onions until they’re sweet and jammy, grill the bacon until crisp, and layer everything over a toasted bagel slathered with cream cheese. A quick trip under the grill melts the cheese to oozy perfection. Let’s get cooking!
Fully Loaded Breakfast Bagels
Ingredients
- 4 bagels
- 5 eggs
- 2 tbsp butter
- 4 rashers bacon
- 1 onion (cut into rings)
- 2 tbsp balsamic vinger
- 1 Avocado sliced
- 4 Cheese slices
- Cream cheese
- Rocket
Directions
- Whisk eggs and season with black pepper and salt.
- Melt the butter in a pan and scramble the eggs until set.
- Grill the bacon until crispy.
- Fry the onions for 5 minutes in a little oil, and then add a the balsamic vinegar & cook until the onions are soft.
- Cut bagels in half and toast.
- Spread cream cheese on each bagel and then assemble the stack: bagel base, rocket, bacon, eggs, onions, slice of avocado and cheese.
- Place under the grill to melt the cheese, top with the other half of the bagel and serve.
