Fully Loaded Breakfast Bagels

There’s nothing quite like a hearty breakfast to kick your day into gear.

These fully loaded bagels are the perfect savoury start – piled high with all the fixings for a supremely satisfying morning meal. We’ve got scrambled eggs, crispy bacon, gooey melted cheese, creamy avocado, tangy balsamic onions, and a spread of rich cream cheese to bring it all together.

It’s an easy but immensely flavourful breakfast that covers all the bases – savoury, salty, creamy, crunchy.

This indulgent breakfast stack is really easy to assemble. Just scramble up some eggs, fry onions until they’re sweet and jammy, grill the bacon until crisp, and layer everything over a toasted bagel slathered with cream cheese. A quick trip under the grill melts the cheese to oozy perfection. Let’s get cooking!

Fully Loaded Breakfast Bagels

  • Servings: 4
  • Difficulty: easy

Ingredients

  • 4 bagels
  • 5 eggs
  • 2 tbsp butter
  • 4 rashers bacon
  • 1 onion (cut into rings)
  • 2 tbsp balsamic vinger
  • 1 Avocado sliced
  • 4 Cheese slices
  • Cream cheese
  • Rocket

Directions

  1. Whisk eggs and season with black pepper and salt.
  2. Melt the butter in a pan and scramble the eggs until set.
  3. Grill the bacon until crispy.
  4. Fry the onions for 5 minutes in a little oil, and then add a the balsamic vinegar & cook until the onions are soft.
  5. Cut bagels in half and toast.
  6. Spread cream cheese on each bagel and then assemble the stack: bagel base, rocket, bacon, eggs, onions, slice of avocado and cheese.
  7. Place under the grill to melt the cheese, top with the other half of the bagel and serve.
