Spiced Chicken Potato and Onion Tray Bake
Ingredients
- 12 chicken thighs (skin on and bone in)
- 3 large red onions (quartered)
- 1kg baby potatoes (quartered)
- 1 tbsp caraway seeds
- 1 tbsp cumin seeds
- 1 tbsp mustard seeds
- 1 tbsp nigella seeds
- 1 tsp turmeric
- 2 tsp sea salt
- 3 tbsp garlic olive oil
- Zest and juice of 2 limes
- Coriander and pomegranate seeds to garnish
Directions
- Preheat the oven to 220C.
- Place the cut potatoes and onions into a large freezer bag, then sprinkle in the spices, lime juice, salt, 2 tablespoons of oil and one tablespoon of water. Zip the bag and give everything a good mix, making sure all the potatoes and onions are coated in the flavourful oil.
- Pour the spiced onion and potato into a large roasting tin.
- Give the potatoes 15 minutes in the oven, then remove and give the tray a shake before adding the chicken.
- Place the chicken thighs on top of the potatoes, skin side up, then season well and drizzle the skin with the remaining oil to ensure they turn crispy in the oven.
- Return everything to the oven and cook for up to 1 hour, or until the potatoes are golden and the chicken is cooked through and the skin is nice and crisp.
- Garnish with coriander and pomegranate seeds before serving.
