Harissa Spiced Cod with Lemon Couscous
For the fish
- 2 cod fillets
- 2 tbsp rose harissa paste
- Juice of a lime
- 1 tbsp garlic oil
- 1 tbsp butter
- Fresh coriander to garnish
For the couscous
- 125g wholewheat couscous
- ¼ tsp Turmeric
- Zest of a lemon
Directions
- In a small dish mix together the harissa paste and lime juice. Pour the mixture over the cod and coat well.
- Heat the garlic oil and butter in a pan.
- Pan fry the fish on one side for 3-4 minutes, then turn and cook for another minute as you baste with the buttery liquid.
- To make the couscous, add the turmeric and lemon zest and combine in a bowl. Then add 125ml of freshly boiled water. Cover and leave for 10 minutes, then fluff with a fork, and season well.
- To serve, garnish generously with chopped coriander. Enjoy!
